‘Too Good To Be True’ Coffee Cake Crumble

• ½ cup oats (regular or quick)
• 1 scoop vanilla protein (I used Devotion Angel Food Cake)
• 2 egg whites
• ½ cup coffee
• 2-3 packets of stevia or better yet, I used Devotion Nutrition’s flavored stevia in Monkey Bread flavor
• Dash of cinnamon
• 1 tsp of baking powder

• 1/4 cup of almond meal
• 1 egg white
• 2 packets of stevia (I used Devotion Nutrition’s Monkey Bread Flex Flavors)
• Dash of cinnamon

Preheat oven to 350 degrees Fahrenheit. Prepare all cake ingredients in a large bowl and mix well. Place in loaf pan sprayed with coconut oil spray. Place batter in pan and set aside. Spray skillet with coconut oil spray and allow to heat up while you prepare the crumble. In a small bowl, add almond meal, egg white, stevia (regular or Devotion Flex Flavors) and a dash of cinnamon. Add to skillet and allow to cook while using spatula to create “crumbles.” Once golden brown, add over top cake batter and place in oven to cook for about 20 minutes or until toothpick comes out clean. Be sure NOT to overcook. Eat while warm, or allow to cool. Even better … dip in coffee. Enjoy!
