Hey everyone! Now that it’s officially winter, I thought it’d be fun to come up with a yummy recipe for Pumpkin Protein Blondies! They’re super healthy, low sugar, low fat, filling and easily fit your macros! If you bake them, let me know what you think!
Pumpkin Protein Blondies
Ingredients
2 scoops vanilla protein powder
1/2 cup applesauce
1/2 cup low-fat Greek yogurt
1/2 cup Truvia
1 cup canned pumpkin
3 egg whites
1 3/4 cups old-fashioned oats
1 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1.5 tsp cinnamon
1/2 tsp pumpkin pie spice
1/4 cup chopped pecans
Directions
1. Preheat oven to 300 degrees
2. Mix ingredients in a bowl
3. Pour mixture into a loaf pan or muffin pan
4. Bake for 20-35 minutes until center is cooked through
5. Remove from oven, and let sit for 5 minutes before slicing
