Heidi Powell is a co-host of “Extreme Weight Loss” with her husband Chris, co-author of two best-selling books, author of a successful blog, mom of four kids (Matix, 11; Marley, 9; Cash, 4; Ruby, 2), NPC bikini athlete and incredibly passionate about all she is doing in life.
I had the chance to meet Heidi Powell this past year while competing at the Europa Games in Phoenix, and recently caught up with her to find out more about her, her experience competing in the NPC, her training and nutrition plan (which are so simple!), how she balances everything, and her upcoming goals in her fitness and career.
In Part 1 of this interview, Heidi shares one of her favorite “clean cheat” recipes from the book she co-authored Extreme Transformation. She uses this recipe as a fun, family dinner that fits into her meal plan (even while prepping for the NPC stage) that her husband and kids also enjoy.
Barbecue Chicken Pita Pizza
1 whole-wheat flat bread (1½ for men)
2 tablespoons reduced-sugar barbecue sauce (we like the smoky mesquite flavor) (3 tablespoons for men)
½ cup shredded Monterey jack and cheddar cheese
2 ounces cooked and shredded chicken
Red onion, thinly sliced
1. Preheat oven to 350 degrees.
2. Spread the barbecue sauce on the pita, then layer ¼ cup cheese, chicken, red onion, cilantro, and remaining ¼ cup cheese.
3. Bake on a baking sheet for 15-20 minutes. Enjoy!

Men: 600 calories; 17g fat; 74g carbs; 43g protein
