This is one of the many reasons why I am always in the kitchen concocting various ways to eat the same foods by simply preparing them in different ways or combinations. For instance, instead of grilling chicken, baking a sweet potato, and steaming vegetables, I’m going to throw them all together into one dish: a Sweet Potato Stew!
This dish is perfect for the cold winter months and is so simple to make! Plus, once it’s cooked it’s so convenient to put in a Tupperware and take with you wherever you need to go. If you have leftovers, freeze it in individual containers for a quick and easy meal that simply needs to be heated.

Sweet Potato Stew
Ingredients:
1 medium green pepper, chopped
1 medium yellow onion, chopped
1.5 lb. raw skinless chicken breast, cubed
(3) 14.5 oz. cans diced tomatoes, including juice
6 oz. nonfat, plain Greek yogurt
1 lb. sweet potatoes – cubed
1 tsp. garlic powder
1 tsp. cayenne pepper
2 packets stevia or Splenda
Salt and pepper, to taste
How to Prepare:
1. Coat the bottom of a large pot with non-stick cooking spray; add chicken, pepper, and onion and cook over medium-high heat until lightly browned.
2. Add tomatoes, yogurt, sweet potatoes, garlic, cayenne, sweetener, salt, and pepper.
3. Bring to a boil over medium heat, then reduce heat to a simmer, and cook until the sweet potatoes are tender, about 30 minutes.
4. Remove from heat and enjoy!!
