It’s that time of year where pumpkin is everywhere you turn. I absolutely LOVE it! The only downfall is that most fall-themed foods are loaded with sugar and unwanted fat. Luckily, I have a few treats in store for you!
Crust-less Pumpkin Pie
I was so excited with my first attempt at a crustless pumpkin pie. Not only did it taste amazing— the macro count made it even better!
Ingredients:
1 can pure pumpkin
8 oz fat free condensed milk (goat’s milk or almond milk. I used condensed for a creamier taste!)
4 oz Muscle Egg pumpkin spice
1 1/2 c Stevia in the RAW
3 scoops vanilla protein powder (IsoNatural Vanilla by Allmax. Omit if you want a classic pumpkin pie!)
1 tbsp baking soda
1 tbsp pumpkin spice
1 tsp cinnamon
3 tbsp just egg white powder
Directions:
Mix all dry ingredients together, then add wet and whisk for about a minute until all is smooth.
Bake at 375 degrees for 30-45 minutes depending on your oven. Do a poke test with a toothpick— when it comes out clean, let cool for 10-15 minutes.
I cut into 11 slices. Of course, you can do 8 depending on how big you want it in an 8-inch pan.

This is an amazing treat to bring with you to a holiday party. While everyone is enjoying your tasty guiltless treat, you can whisper in their ear, “That’s only 69 calories, sugar free, and low carb!” They will think you’re lying— it’s too good to be true!
One-Ingredient Pumpkin Pancakes
Now let’s talk about having pumpkin treats EVERYDAY! I add absolutely NOTHING to this recipe. It’s just one ingredient— it is that good!
Who has heard of Muscle Egg? (for information on Muscle Egg go to: http://www.muscleegg.com). Muscle Egg has an amazing flavor— PUMPKIN EGG WHITES! They may not be AS fluffy as protein pancakes with oat flour or coconut flour— but Muscle Egg pumpkin-flavored egg whites do the trick!
Just blend in your Magic Bullet (or any hand-held blender) and pour into a silver dollar pancake pan. You do not have to add anything to them— they are that delicious!
Keep it simple and you will never steer off from this clean-eating lifestyle. (In picture: I topped with 1 tbsp almond butter and sugar-free Walden’s syrup.) This is how I cure my sweet cravings. I take these as to-go snacks and it’s also a nice treat, especially right before bed!
