No-Bake Berry Cobbler - 54% fewer calories than standard version
Even the best desserts still contain unnecessary sugars and fats, which contribute a whole lot of unnecessary calories that we simply don’t need! I’ve taken the standard berry cobbler and Slim Pickinized it with a few healthy ingredient swaps to smash those calories to smithereens! How much? See below for an estimate of the standard dish compared to my Slim Pickinized version. My Berry Cobbler has 54 percent fewer calories! What’s even better? My cobbler has 8.5 grams of healthy fiber and requires no baking during the hot summer months. Enjoy!

1/2 cup oat granola without raisins
1 TB coconut oil
2/3 cup each: blueberries, raspberries, blackberries
2 TB granulated stevia or Splenda
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
pinch salt (optional)

How to Prepare

1. Spray a small skillet with non-stick cooking spray and add the granola. Toast the granola over medium-high heat for approximately 2 minutes, or until slightly golden brown. Remove from heat and set aside.
2. Melt the coconut oil in a separate large non-stick skillet, add the berries and cook over medium heat for 5 minutes, stirring occasionally. Add stevia, cinnamon, vanilla extract, and pinch of salt to the berries and cook an additional 1 minute, stirring occasionally.
3. Spoon the berry mixture into a bowl and top with the granola. Enjoy!

Note: You can serve hot or cold! Also, feel free to add a scoop of vanilla frozen yogurt to the hot cobbler for an added treat (yogurt calories not included below).
