|Standard Berry Cobbler||Slim Pickinized Berry Cobbler|
No-Bake BERRY COBBLER
1/2 cup oat granola without raisins
1 TB coconut oil
2/3 cup each: blueberries, raspberries, blackberries
2 TB granulated stevia or Splenda
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
pinch salt (optional)
How to Prepare
1. Spray a small skillet with non-stick cooking spray and add the granola. Toast the granola over medium-high heat for approximately 2 minutes, or until slightly golden brown. Remove from heat and set aside.
2. Melt the coconut oil in a separate large non-stick skillet, add the berries and cook over medium heat for 5 minutes, stirring occasionally. Add stevia, cinnamon, vanilla extract, and pinch of salt to the berries and cook an additional 1 minute, stirring occasionally.
3. Spoon the berry mixture into a bowl and top with the granola. Enjoy!
Note: You can serve hot or cold! Also, feel free to add a scoop of vanilla frozen yogurt to the hot cobbler for an added treat (yogurt calories not included below).
