Apple Crumble

APPLE CRUMBLE

Ingredients
3 medium Pink Lady apples (or tart apple of your choice), peeled, cored, and chopped
3 TB granulated stevia (or your preferred sweetener)
1 tsp cinnamon
1 tsp. vanilla extract
1 tsp. lemon juice
1/2 tsp. pumpkin pie spice
1/2 tsp. salt

CRUMBLE TOPPING
½ cup Jamie Eason vanilla Whey Protein Shake, or vanilla whey of choice
1/3 cup oat flour
3 TB finely ground hazelnuts (you can sub nut of your choice)
2 TB coconut flour
2 TB coconut oil (melted)

How to Prepare

1. Preheat oven to 400F.
2. In a mixing bowl, combine chopped apples, stevia, vanilla, lemon juice, pumpkin pie spice, and salt. Toss well to coat. Set aside.
3. In a separate mixing bowl, whisk together whey protein, oat flour, hazelnuts, and coconut flour. Pour coconut oil over dry ingredients and mix with a fork, breaking up any large chunks, until nice and crumbly.
4. Divide apple mixture amongst 4 small oven-safe ramekins and top each with 1/4 of crumble mixture.
5. Place ramekins on a baking sheet and bake approximately 30-35 minutes, until the apples are nice and tender and the crumble topping is golden brown. Enjoy!
