Extra Lean Turkey Chili - High-fiber and Low-fat Hearty Meal
What better way to warm you up during the cold autumn months than with a big hearty bowl of chili? Packed with a ton of protein and 10 grams of fiber, it’s not only delicious, but also satisfying enough to fill you up (at least for a couple of hours). What’s more? It has less than 4 grams of fat per serving! My Extra Lean Turkey Chili is made with extra lean ground turkey, two different types of beans, pumpkin (‘tis the season!), lots of my favorite spices for added flavor, and just the right amount of heat for an added kick. I suggest making a big pot of it because it’s great as leftovers or to freeze and reheat for a quick and easy meal. Even though there are a lot of ingredients, it’s so incredibly easy to make! Enjoy!

EXTRA LEAN TURKEY CHILI

Ingredients

1 TB olive oil
1 large onion, chopped
2 TB minced garlic
3 lb. extra lean 99% fat-free ground turkey, raw
3 1/2 cups canned crushed tomatoes
1 1/2 cups canned pure pumpkin
2 TB lime juice
1/4 cup tomato paste
15 oz. can kidney beans, no salt added, drained and rinsed
15 oz. can pink beans, drained and rinsed
1/3 cup frozen peas
1 large each: red and green bell pepper, chopped
2 large stalks celery, chopped
1 large jalapeno pepper, seeded and finely chopped
2 tsp. cumin
1/4 tsp. each: ground black and cayenne pepper
1/4 cup chili powder
4 TB granulated stevia (or your preferred sweetener)
1 TB Italian seasoning

How to Prepare (so easy to make!)

1. Put a large pot over medium-high heat and heat olive oil. Add onion and garlic and cook for a few minutes until the onions and garlic are browned (be careful not to burn).
2. Lower the heat to medium and add ground turkey, stirring and chopping with a large spatula or spoon, until the turkey is crumbled and well browned.
3. Lower the heat again to medium-low and add ALL remaining ingredients. Cover and let simmer for at least two hours until nice and thick, stirring occasionally to prevent the bottom from burning. NOTE: the longer you let cook, the more flavorful and hearty your chili will be, so sit back and relax! Enjoy!

Per approx. 1-1/4 cup (recipe makes 8 servings): 350 calories, 50 grams protein, 30 grams carbohydrates (10 grams fiber!), 3.5 grams fat
