What’s better than peanut butter and cookies? DOUBLE Peanut Butter Protein Cookies! These cookies only taste like you should feel guilty about eating them, but don’t you fret; these bad boys only contain healthy ingredients. Each cookie has 125 calories, so dig in and have a cookie …or two. Typically when I write my recipes, I will just list a generic whey, casein, or blended protein in the ingredients. However, every once in a while I come across a protein that I just can’t help but mention and Jamie Eason’s signature protein line has led me to do just that! Enjoy!

Double Peanut Butter Protein Cookies

DOUBLE PEANUT BUTTER PROTEIN COOKIES

INGREDIENTS
2 scoops Jamie Eason Multi Purpose Peanut Protein
1 scoop Jaime Eason vanilla Whey Protein Shake, or vanilla whey of choice
3/4 cup granulated stevia (or your preferred sweetener)
1/4 cup shelled peanuts
1 tsp. baking soda
pinch salt
1/2 cup creamy peanut butter
1/3 cup unsweetened applesauce
1 large egg

HOW TO PREPARE
1. Preheat oven to 350 degrees F and spray a cookie sheet with non-stick cooking spray (or line with parchment paper).
2. In a mixing bowl, combine ALL ingredients and mix with an electric mixer on medium speed until well blended (you can also mix by hand, but you will get better results with the mixer). The dough will be stiff.
3. Roll the dough into 12 balls and space evenly on the cookie sheet. Press down the balls with the back of a spoon to shape.
4. Bake for approximately 8-10 minutes, or until lightly golden brown. (Be careful not to over bake or they might be too dry). Enjoy!
