BERRY GRANOLA GREEK YOGURT POPSICLES
Ingredients:
1 cup unsweetened Greek yogurt
1/4 cup + 1 TB unsweetened almond milk
3 TB granulated stevia, to taste (or your preferred sweetener)
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1 cup sugar-free berry jam or fruit preserves (approximately 10 calories per TB)
3/4 cups no added sugar granola (approximately 120 calories per 1/4 cup)
NOTE: I used a 6-form ½ cup (4 oz.) Popsicle mold. You will also need Popsicle sticks.
How to Prepare (SO SIMPLE!!)
1. Whisk together the yogurt, almond milk, stevia, cinnamon, and vanilla extract until well blended. Note: the yogurt mixture should be on the thicker side, but pourable (only if needed, add a touch more almond milk until this consistency is achieved).
2. Scoop out 1/4 cup of the yogurt mixture and stir it into the granola (in order to help the granola bind well as the Popsicles freeze). Set aside.
3. Into the bottom of each of the 6 Popsicle molds (1/2 cup or 4oz. capacity) pour a generous spoonful of yogurt. Next, add a scoop of granola and then a spoonful or two of the jam. Continue this layering of yogurt, granola, and jam process until the molds are filled. Gently tap the molds against the counter to remove air bubbles between the layers.
4. Lastly, insert Popsicle sticks into each mold and place the Popsicles in the freezer until solid (usually at least 5 hours). Enjoy!
Tip: to easily remove the Popsicles from the mold, run the bottom of the mold under water for a few seconds.
