My Baked Cinnamon Streusel Stuffed Peaches are such a delicious treat that you would want to eat them for breakfast and for dessert. The sweet peaches are stuffed with a cinnamon and oat filling, topped with walnuts and just enough coconut oil to skyrocket the flavor and smoothness of this dish. They are so incredibly easy to prepare. What’s even better? Each peach half has 185 calories and only 9 grams of healthy fat!

Baked Cinnamon Streusel Stuffed Peaches

BAKED CINNAMON STREUSEL STUFFED PEACHES

Ingredients

2 ripe, firm peaches, halved and pitted
1/2 cup old fashioned oats
1 scoop Jamie Eason vanilla Whey Protein Shake, or vanilla whey of choice
2 tsp. ground cinnamon
pinch salt
8 walnut halves
4 tsp. coconut oil

How to Prepare

1 Preheat the oven to 375 degrees F.
2 Coat an 8-inch baking dish with non-stick cooking spray. Arrange the peaches cut side up in the baking dish and set aside.
3 In a small bowl, mix the oats, whey, cinnamon, and salt together until well blended.
4 Divide the oat mixture evenly into the center of each of the 4 peach halves. Put 2 walnut halves into the oat mixture of each peach half and then top each peach half with 1 tsp. of coconut oil.
5 Bake for approximately 30 minutes, or until the peaches are tender and the filling is crisp and lightly golden brown on top. Remove from oven and let sit for about 10 minutes before serving. Enjoy!
