The typical deviled egg is made with the yolk and lots of added mayo, which contributes to an abundance of saturated fat, that I would rather not eat. So I did what I do best and recreated it to include healthy fats. The creaminess of the avocado won’t leave you missing the yolk and mayo one bit. What’s more? It only takes about 5 minutes to prepare!

AVOCADO DEVILED EGGS
Ingredients
6 hard-boiled eggs, sliced in half length-wise, whites only
1/2 ripe avocado (100g)
2 TB nonfat plain Greek yogurt
1 TB chopped pickle relish
3 TB celery, finely chopped
1 tsp. apple cider vinegar
1 TB Dijon mustard
1/2 packet stevia
pinch salt and pepper, to taste
dash paprika for topping (optional)
How to Prepare (so easy!!)
1. Slice the hard-boiled eggs in half length-wise and remove the yolks. Set aside.
2. Put the avocado, yogurt, relish, celery, vinegar, mustard, stevia, salt, and pepper into a mixing bowl and mash together with a fork until the mixture is smooth.
3. Scoop the mixture with a small spoon and divide evenly into each of the egg white halves. Sprinkle with paprika. You may chill the eggs for at least a half hour to set or serve immediately, whichever your preference is. Enjoy!
