BBQ Chicken Pizza
Serves 1-2
Ingredients:
1 P28 wrap
2 tbsp of olive oil
1/4 tsp garlic powder
3 tbsp of BBQ sauce (Check out Walden Farms brand)
1/4 cup of pizza sauce
1 cup mushrooms
1 cup chopped onions
1 cup red peppers
1/2 cup cilantro
6 oz diced cooked chicken
1/2 cup low-fat mozzarella cheese
Directions:
Preheat oven to 375 degrees. Put P28 on a nonstick pizza pan. Brush the wrap with olive oil and sprinkle the garlic powder. Mix together BBQ and pizza sauce in a small dish and spread onto wrap. Add all toppings then chicken then cheese. Bake 15 minutes.
SNACK
Garlic Truffle Popcorn
Serves 1
Ingredients:
1 bag of single serve Orville Redenbacher’s Smart Pop
1 tbsp white truffle olive oil
1/4 tsp of garlic powder
1 tbsp of nutritional yeast
Directions:
Pop 1 bag of single serve popcorn. Drizzle 1 tbsp of white truffle olive oil. Sprinkle 1/4 tsp of garlic powder and 1 tbsp of nutritional yeast.
DESSERT
Iced Chewy Pumpkin Cookies
Serves 8
Ingredients:
3/4 cup of Carbquik flour
1 cup pumpkin puree
1/4 cup of Splenda brown sugar
2 Splenda or stevia packets
2 tbsp of fat-free soft butter
1 egg white
1/4 tsp vanilla extract
1 tsp of pumpkin spice
1 tsp cinnamon
1/2 tsp baking powder
1/2 cup oats
1/4 cup of raisins
Icing Ingredients:
1 scoop of vanilla protein powder
1/4 cup of Unsweetened Vanilla Almond Breeze
1 stevia packet
Directions:
Preheat oven to 350 degrees and spray a large cookie sheet with nonstick spray. In a medium bowl, mix pumpkin puree, brown sugar, stevia, butter, egg white and vanilla. Add in and mix flour, pumpkin spice, cinnamon, baking powder. Add in and mix oats and chopped raisins. Spoon batter onto baking sheet then press down to make circles. Bake 15-20 minutes. Makes 8 to 10 cookies, depending on the size.
While cookies are baking, mix together all icing ingredients (protein powder, almond milk and stevia) and then place in the fridge until cookies are cooked and cooled for 15 minutes. Apply the icing and enjoy :)
