January 24th is National Peanut Butter Day! As the “Peanut Butter Bandit,” the nickname my hubby gave me years ago, I couldn’t let such a joyous occasion pass by without paying it homage. To celebrate the creamy goodness, I created a quick and easy protein cookie recipe that honors one of the greatest peanut butter creations of all time— the PB&J.
Made with Gaspari Nutrition’s brand Myofusion Elite Peanut Butter Cookie Dough Protein and a few other simple ingredients, you can whip up these cookies whenever those peanut butter cravings strike. Or, double the recipe and bake these for someone you love. The cookies are so delish that your loved ones won’t suspect that they are “healthy.” (Just ask my hubby.)

JB’S PB&J PROTEIN COOKIES
Yields 3 cookies
1 scoop Gaspari Nutrition MyoFusion Elite – Peanut Butter Cookie Dough
1 tbsp. natural nut butter
1 tbsp. Greek yogurt
1 tbsp. low sugar jelly*
*Use store bought or make your own by combining mashed berries with your sweetener of choice.
Preheat oven to 350 degrees. Combine the protein, nut butter and yogurt in a bowl. Spoon the dough onto a lightly greased cookie sheet. The mixture should yield approximately three cookies. Bake for 8-10 minutes. Top each cookie with a teaspoon of low sugar jelly and enjoy!
Push Toward Your Best
When starting a new nutrition program, there is often debate on whether we should abstain from eating our favorite “indulgences” or if we should just eat them in moderation. From my experience, this completely depends on the individual. If one taste is going to create crazy cravings, then you are likely better off as an abstainer. If knowing that you can have a little taste gives you a sense of control and ownership of your fitness program, then you are suited for the moderation approach. The key is to get real with ourselves. We must recognize patterns and weaknesses and adjust our diets accordingly. When we do, we’ll be one step closer to our best!
